Food Quality and Safety in Catering

The major challenge in the food sector is to restore consumer confidence by informing consumers of all prevention and control measures that are used in food handling and production activities. This is a concern which is shared at the European Union Member States level, and Community legislation has been developed. The most representative of this is Regulation (EC) 852/2004 on the Hygiene of Foodstuffs.

In order to respond to the specificities of this sector, APCER developed a service requirements specification: APCER 3002 – Food Quality and Safety in Catering.

This service requirements specification was designed to respond to the needs of catering establishments, including collective catering establishments, regarding food quality and safety in the provision of food and/or drinks supply services.

The main benefits of the implementation and subsequent certification in accordance with this standard include:

Increased customer and consumer confidence through the adoption of high standards of food compliance;

Eliminating or reducing risks to consumers;
